I knew of Rumtopfe but had forgotten about them. I was reminded of them by the Rum book Thread.

I looked up a recipe that I think will be nice and will be giving it a go in the near future.

This is the recipe I will try I may change it a bit but it'll be close;

300 g Raw sugar
125 ml limejuice
2 or 3 bottles Rum overproof is better I think I'll use 2 pussers 75% and 1 S&C
3 big ripe mandarines
2 Mango(s), ripe
1.5 kg assorted berries
1 small pineapple ripe
2 sticks cinnamon
2 vannilla pods

In a gallon or 5 litre earthenware pot place berries,pineapple and mango. Fruit only no skin or stones. Place vanilla and cinnamon stick between fruit.
dissolve sugar with 1 bottle of rum and pour in pot. Hopefully the level of rum will be about 2 cm above the fruit. If not, add more.

Seal and store in dark cool place for 4 weeks.

Open and add mandarine flesh and any other fruit that may be in season or that you think may go well. Perhaps coconut meat?

Add 1 more bottle rum and 100 gm more sugar. (perhaps honey?)

Seal and store for 4 more weeks

Open, add last of rum and more fruit seal and store 4 more weeks.

Open drink liquid and use fruit for deserts.
