An easy way to separate the pure from the altered...

Special Note: this is a special sorting of the Master List in order of amount of sugar found by test. It may NOT be reproduced (the Master List can be, as detailed there). It includes tests from ALKO, the Swedes, Drejer, Cyril, Pirate, dawsonh, Cyril and Moi.

This list is organized from "0" sugar to, gulp (227g) in order, simply to demonstrate two facts: first, that almost half the rums tested for no or very little sugar (reassuring), while a bit over half are significantly altered with secret sugaring - and second, that it is the PREMIUM rums that are much more likely to be so altered and with much, much more sugar (say 30-45g/L).

Dave Russell's Rum Gallery

Note: Dave was perhaps the first commercial rum site to start actively listing sugar content, bravo! Although some are the result of his own testing, most (listed as "0" are based on his reliance on the country of origin's law, and probably not actually tested. Last though, Dave still favors the sweeties and seems to retain a preference for cost and age.

Caveat! According to Russell, he lists content as "0g" exactly if the rum comes from a country that does not allow sugar. Now since we all know that distillers never cheat, that assumption is dubious at best. Thus, the only listings you can fully trust are those that show a range!
Russell: "In cases where the country of production forbids adding sugar, such as Barbados or AOC Martinique, the number is listed as 0 g/L (grams per Liter). For countries where such regulations are not in force, the sugar content is a derived measurement and shown as an estimate. "
Addenda 10/3/15: It appears Russell has modified his statement re testing, to:
"In cases where the country of production forbids adding sugar, such as Barbados or AOC Martinique, and my measurements confirm no added sugar, the number is listed as an absolute, i.e.: 0 g/L (grams per Liter). For countries where such regulations are not in force, the measured sugar content is shown as a range in 5g/L increments (i.e.: 6-10 g/L). This measurement is derived from tests, with the caveat that the range is a calculated estimate.

Most* of the sugar content data results from measurements diligently made by myself or Rum Gallery's friend Johnny Drejer. *Some of the data on sugar content was performed by the Swedish government and published at www.Systembolaget.se"
This would seem to indicate:
  • 1. That all the rums where sugar is reported have been tested.
    2. Russell may have tested some of them, but appears to rely on Drejer or ALKO
    3. The number is reported as "0" (exactly) if the country has laws against adding sugar. Otherwise he has reported 5g ranges, eg "6-10".
The last - the dependence on a country's laws - is curious. Since laws are commonly evaded by distillers, I see no reason to extend the benefit of the doubt and deny all sugar ("0g") based on the law, and not on the tests.

In sum, it seems that only those listed as a range, eg "0-5", are reporting the actual test results. To be fair, I would like to report Russell's results but do not want to simply duplicate the Drejer or ALKO results that Russell is apparently reporting. Thus I've emailed this gentleman to ask him to please identify which of the tests are his own, so that he may be included in the Master List based on his own work.

Discussion and Flat Ass Bottom Line

First, a big thanks and recognition of both ALKO and Johnny Drejer, particularly Johnny whose hard work is a great gift to all who value pure rum. In the spirit of education I'd like to address a few things...

First, that there are more pure or nearly pure rums than some of you may have expected. It's all too easy to believe that there are so few pure rums, that it's a lost cause and why bother? The truth: there are really quite a few, not quite half of the rums tested!

Second are the surprises. To me the biggest surprises are the Plantations, where sugar is admitted but states that their only intention seems to be to modestly "round" their rums. As the test results indicate, that does not follow with 18 to 20 grams of sugar being frequently used. Think about it. If the intention is "rounding", how is it that almost all their rums get the same amount of sugar? And that much? Spare me.

A second surprise to the market (but not to most of us) is El Dorado - master marketers with "200 year old stills" but also LOTS of sugar, especially with their "premium" oldies! Indeed, we also learn that many of the so-called "super-premiums" are super only in the massive amounts of sugar needed. Think too about that. If these rums are really their best, then why all the sugar? The party-hearty crowd loves sugar in their flavored vodka/rum, but the afficianado who's spending $100 to $200?

You decide.

Other (not) surprises include Don Francisco's Abuelo line, the Dos Maderas sugar bombs, and the very expensive Millonario's and the Presidente offerings, among many others (see list above).

Third are some pleasant surprises: the Brugal's, the Ron Botrans, and yes, the authentic Havana Club offerings. Oh, and except for the extracts of prune and vanilla, even the Ron Matusalem Soleras. I was particularly pleased to see that perhaps the best value of the bunch - the Ron Viejo de Caldas are spot on pure.

Again, thanks to Johnny Drejer and the good guys at ALKO, the Swedes, Cyril, the Pirate, Dawsonh and Mamajuana, whose bravery and transparency serve us all. Up spirits!

Interesting list.

I am wondering what it means when the same rum is listed twice in a row.

Me: I publish all tests; some rums have been tested by several sources.

Is the first one old and then new? And does that mean old measurement, new measurement, or old version of the rum, new version of the rum?

Me: good question. The testers and I try to identify the old ones as possible.


In particular, I'm interested in the ED21, which has a primary measurement of 16, but the next one is 33. Quite a difference, which one really applies?

Me: See above. This one was tested twice. The lower figure appears to be an error. Go with the 33g as this was tested by hydrometer.

I was also quite surprised by Pusser's Blue @20, and 27 in the decanter (!) Big wtf on that.

Me: we all feel the same way; fortunately the good old Blue 40% (and 75%) are fine.

Good to see the ED single barrels were unfutzed with, but at the $65+ they were charging, they didn't help the fans out very much.

I cannot give a specific explanation for the difference in measured %abv in the ED21.
One test was done with Hydrometer and the second test was done with the Anton Paar (both pictures attached).

In both cases the rum had been open very recently. Daniel who owns the Anton Paar has sent it in for Calibration, so it will be interesting to see if it still measures the same values. I must admit that I trust the Hydrometer more than the Anton Paar.

Pusser's surprised me. I did not expect to find that amount of sugar in those expressions.

We also did some tests with a rum that had no sugar added. Using cane sugar dissolved into the rum, we found that with 5-10g/L we started to detect the changes to the rum (enhanced existing flavors and less "alcohol" feeling in the mouth), increasing up to 20g/L the flavors were still detectable and the rum now tasted sweet. At 30-45g/L most complex flavors are now gone and the rum is overly sweet.

It is notable that our Che had exactly the same impression - even 5 mg was detectible, and the more sugar, the more the rum was masked and overwhelmed by its addition. In his email Johnny was kind enough to actually send me pics of the tests and readings. His own accurate method - the hydrometer - showed the ED21 at 33g. Hope that helps, Tot...

While I can't seem to find a way to search for sugar content there they have some sugar contents listed for their rums but not all of them. Some not listed on either source.

Another source is my friend Dave from the Rum gallery who has started to diligently list sugar content. While some results he has taken directly from Drejer he has started doing his own testing also.

There are at least four of us who fought the fight, and were "liberated" for even questioning the use of sugar. And NOW he believes in transparency?! Not really. I like Dave, but a butt kisser he is, for example regaring da'rum's St. Lucia example Russell, quoting Hamilton:
"The molasses used at St Lucia Distillers was sourced from Guyana and contained 65% dissolved sugar, one of the highest sugar contents of any molasses found in the Caribbean. The high sugar content is attributed to the age of the Guyanese sugar mill.”
Age of the mill has nothing to do with it. The processing of cane juice to obtain sugar and the once byproduct of molasses is VERY well known and highly developed. The percent sugar is based on the boil used (of typically 3 boils). First boil or food grade (used by Prichard) comes in at 65-75%, while "blackstrap" (last boil) can be anywhere from 40 to 55%. I'll say it again, the age of the mill, or the length of the Preacher's Pinocchioed probiscus has nothing - nothing! - to do with it. It's worth noting that most of the molasses used in the "Caribbean" is now supplied by Brazil. Arses.

And though I hate to say it, Russell expends as much verbiage on the Pioneer Preacher than he does on the rum, to the point that he even tries to get under his flowing silk robe, to wit:
"The Rum Gallery is perhaps the closest current equivalent to Hamilton’s books and his discovery of rums by sailing. Ed has influenced many of us, getting us started in our careers exploring the art of rum. Respect and gratitude, Mr.Hamilton."
C'mon Dave, really now? OTOH, kudo's to Dave for having the cajones to publish sugar levels and - hurrah! - to actually do some of his own testing - something that his hero isn't likely to do anytime soon.

So how much sugar is 25 grams?


Answer: 6 teaspoons in a bottle of rum. That's close to Plantation territory. And please don't forget that as bad as that is, there are some (think ED and the Zee/Pee rums) that are adulterated with nearly double that - 12 teaspoons in a bottle?

My plans now: to add Russell's tests, and the Swedish date (my bad, I forgot). I hope you've also noted just how easy to test your own rums using Drejer's Seales' approved method. In this regard I ordered a set of 3 hydrometers (0-40, 40-70 and 70-100%) for - yup - just $6.95, with case and thermometer (the 0-40 is the one you'll use).


Flat Ass Bottom Line

As I've said many times, it is simply amazing how small the world of rogue rum is. A few individuals can have a great impact which started some years ago with the first real break through - the outing of Z23, then others like Pyrat, Angostura 1919, and Diplomatico. Our mutual suspicions and beliefs were greeted with derision and denial and yes, liberation.

The crytals are out of the bag now though, and it's game on. I believe the Fat (unfrozen) One will join the crusade to out sugar by publishing levels with each review (I'm working on it). For now and here, this post will become the repository for testing, as I will add new rums to the OP, above.

It's with great sadness that I read that ED21's higher measurement is the likely correct one. I thought that was the, ahem, sweet spot in the line.

I've got a few bottles in reserve, but I don't now think I'll be buying more as they deplete.

Sure, I enjoy drinking it, that hasn't and won't likely change, but if I'm going to spend that money, I have a choice to buy and support something else instead. Ironically, I have the choice to buy output from DDL's own stills from an independent bottler, unadulterated. So that's what's gonna happen.

I had in my mind that making an exception for ED was OK in the sense that their operation produces the pure rums that I love the best. But it isn't really. All it does is tell them "make more of this".

I am all about my Demerara. I use that golden-brown Demerara raw sugar in every recipe that calls for sugar, accepting no substitutes. It goes in my oatmeal. It goes in my aged egg nog. I'll end up visiting DDL pretty soon after the oil price recovers and my work picture strengthens.

But even DDL has to earn the support when it comes to what's in the bottle.

For a similar price as the ED21 you can get the Bristol Port Morant 1990 (or for less the 1999 edition). This is the still which is pre-dominant in the Pussers line up. If you buy a bottle of this and you have the Pussers 15 Year Old just try the two against each other. It's like trying a cup of tea/coffee with and without sugar added.

It's very interesting and the best straight comparison I have found thus far

This list, although complete for the moment has been superceded by the Compiled List which lists all the rums above - together - in a single alphabetical list. Obviously, this is much more useful

Also - as you now know the Great Rum Test will soon be underway as perhaps 5 or 6 of us now - all with some decent collections will start the People's testing. These tests will be added to the list, and credited to each tester. BTW, it's fine to test a rum that's already been tested as this will indicate how consistent that distiller is...
