Irish coffee to PIRATE coffee

Irish coffee to PIRATE coffee

Looking for good recipes for what I call Pirate coffee which is basically Irish coffee but using rum rather than whisky. Any recipe recommendations?

Great question, hmm. A task for say a Mount Gay Eclipse or Appleton V/X I'd say. But I know there are better mixologists than I out there...

I wonder how Clement Premiere Canne, Koloa Gold, Siesta Key Gold, or Real McCoy 5-year would do. Once I get a recipe I like I want to try different rums and see what I like best. Might even do something a little off-the-wall to see what happens like use some Brinley Vanilla rum or Koloa Coconut rum. Maybe even some Cayman Reef Double Black rum (one of my go-to rums to use in Coke Zero).
