Some rums are special...


Long, long ago I found Count Silvio's the forum the place to hang out. Intelligent, open-minded, relatively honest and with a small but highly talented following.

It was the place for real, repectful and non-biased discussion. Sadly, the Count had a server meltdown, and the site never really recovered. Valued threads were lost and most of the participants wandered away.

It was at the Count's where JaRiMi and I had more than a few spirited exchanges where we honestly debated a number of issues at length, and never, ever descending into the namecalling and liberation common at sites like the Shillery.


So what?

So? So at one time JaRiMi argued strongly for a "Trinidadian Style". I wasn't buying it, but having had little experience with many Trini rums, I couldn't reject his position either.

Fast forward a couple years...

For years I'd heard of "Scarlet Ibis", alleged to be a blend of 3-5 year blended, copper pot-stilled Trini rums, aged in small casks, unfiltered and uncolored and at a respectable 98 proof. In other words, a rum to find and try.

It wasn't easy.

Scarlet Ibis was originally produced for "Death & Co." (link) a special, dark New York bar dedicated to fine and rare spirits, and classic cocktails recaptured from the days of old. Scarlet Ibis was designed for them to represent a singular and truly classic rum. Sadly this Caroni produced rum is no longer made, and the distillery and stills no longer in operation.


A collector's item.

But I finally did find a lone bottle and against my better judgment (to avoid reviewing rums you can't find), I simply couldn't resist its history and quality production in copper pot stills. JaRiMi's words could not be forgotten, and we bought and reviewed it. Read on...
